Banana Muffins

Banana Muffins

•1 1/2 cups whole wheat flour
•1 teaspoon baking soda
•1 1/2 teaspoon baking powder
•1/2 teaspoon salt
•3 mashed bananas
•1/2 cup sugar
•1 egg, lightly beaten
•1/3 cup melted coconut oil
•pinch of cinnamon
•pinch of ground flaxseed
•pinch of chia seeds (those aren’t 🐜!)

Preheat oven to 375 degrees. Lightly grease 12 muffin cups.
Mix together wheat flour, baking soda, baking powder and salt in a large bowl. In second bowl, beat together bananas, sugar, egg and melted coconut oil. Stir the wet ingredients into the dry ingredients just until moistened. Spoon batter into prepared muffin tins, filling 3/4 full. It will make exactly 12!
Optional: Sprinkle cinnamon and sugar on top of heated muffins (as they cool) for a fun topping.
Bake in preheated oven for 18 to 20 minutes. Check for a clean toothpick in the middle of the muffin for finish! Enjoy!
